Lemon Tiramisu 🍋☁️

INGREDIENTS:
• 1 1/2 cups heavy cream
• 8 oz mascarpone cheese
• 1/2 cup granulated sugar
• 1/4 cup fresh lemon juice
• 2 tbsp lemon zest
• 1 tsp vanilla extract
• 24 ladyfinger cookies
• 1/2 cup limoncello (or lemon simple syrup)
• Fresh berries for garnish (optional)
DIRECTIONS:
1. Whip heavy cream until stiff peaks form in a large bowl.
2. In another bowl, mix mascarpone, sugar, lemon juice, zest, and vanilla.
3. Gently fold whipped cream into mascarpone mixture until combined.
4. Quickly dip ladyfingers in limoncello and layer in a 9×9 dish.
5. Spread half the cream mixture over the first layer of ladyfingers.
6. Repeat with another layer of dipped ladyfingers and remaining cream.
7. Chill for at least 4 hours or overnight before serving.
8. Garnish with fresh berries and lemon zest before serving.
