Spicy Lobster Tails with Smoky Hatch Chile Butter

Ingredients:

4 lobster tails
1/4 cup unsalted butter, melted
2 Hatch chiles, roasted, peeled, and chopped
2 cloves garlic, minced
1 tablespoon fresh lime juice
1 tablespoon smoked paprika
1/2 teaspoon cayenne pepper (optional)
Salt and black pepper, to taste
Fresh cilantro, chopped, for garnish
Lime wedges, for serving
Directions:

Preheat your grill to medium-high heat.
Using kitchen shears, cut down the back of each lobster tail to expose the meat, then carefully loosen the meat from the shell.
In a small bowl, mix the melted butter, roasted Hatch chiles, garlic, lime juice, smoked paprika, cayenne pepper (if using), salt, and black pepper.
Brush the lobster tails generously with the Hatch chile butter mixture.
Place the lobster tails on the grill, shell-side down. Grill for 8-10 minutes, basting with more butter sauce as they cook, until the meat is opaque and fully cooked.
Remove from the grill and garnish with fresh cilantro and lime wedges. Serve immediately with additional Hatch chile butter sauce on the side.
